Steak
Pan smoking hot, salt, two minutes a side, butter and thyme at the end. The crust is the whole point.
Cornbread
Pan in the oven while it heats, batter in, twenty minutes. The edge is the best bit.
Smash burgers
Balls of mince, smashed flat with a spatula, sixty seconds. The pan takes the heat.
Eggs
Medium low, butter, patience. Slides out on day one.
